Fried Chicken with Colourful Peppers!

Without further much saying, let's get straight into the recipe! Today's dish is going to be Fried Chicken with Peppers!




You will need:
(4 servings)

250g boneless chicken thighs
1 whole pepper
Soya sauce
Pinch of sugar
Pinch of corn starch
oyster sauce
Cooking oil


Steps:

1. Dice up the chicken thighs. Marinate it with soya sauce, sugar and corn starch.
2. Remove the seeds of the pepper and cut into bite-sized slices.
3. Heat up a frying pan and add some cooking oil. Fry the chicken until it is almost cooked, add in a spoonful of oyster sauce and 5 spoons of water. Cook until there is minimal sauce. Remove chicken off the frying pan.
4. Fry the peppers with a little bit of oil. When the peppers are done, add in the chicken to mix everything.

Done! Easy, right?

This is best when served with rice.

Just Yellow and Orange!

I found a few leftover ingredients in the fridge and so I came up with this recipe --Yellow/Orange Bake! Yea, all the leftover ingredients happened to be either yellow or orange.. hence the name. 


You will need:
(4 servings)

a third of a squash
a potato
2-3 carrots
mozzarella cheese
mixed herbs (I just used the Asda brand)
grounded black pepper
butter
water
cooking oil

Steps:

1. Peel the potato, carrots and the squash.

2. Cut them up into small chunks.
3. Boil the squash until it softens.
4. Boil the carrots until it softens.
5. Preheat the oven at 200C.
6. Add in cooking oil to a pan, then fry the potatoes until the sides turn slightly golden brown.
7. Add in a bowl of water and put the lid on to allow the potatoes to cook.
8. Turn off the heat when all the water is gone.
9. Prepare a container with aluminium foil.
10. Add in the ingredients in layers, I added the carrots first, then potatoes, then mozzarella cheese, and melted some butter and pour it on top. I also added in some mixed herbs and grounded black pepper. Lastly, I added in the squash. and some more butter and mixed herbs on top.
11. Place it in the oven for 10-15mins.
12. Take it out and sprinkle more mozzarella cheese and mixed herbs and grounded black pepper.
13. Place it back into the oven for 5mins. 

You may serve it with some tomato pasta or rice. For the pasta, I just went with a very simple sauce:

You will need:
(4 servings)

500g of pasta/macaroni 
4-6 spoons of ketchup
1-2 bowls of water
3/4 tsp of brown sugar
Mixed herbs

The measurements above were just an estimate, and you can adjust it according to your preference. I tend to taste it along the way to find the right balance for myself:P

Steps:

1. Boil the pasta with water and little bit of cooking oil.
2. Drain away the water and run the pasta under cold water.
3. Place the pasta into a pan, Add in some ketchup and water.
4. Sprinkle some mixed herbs and some grounded black pepper.
5. Add in some brown sugar if you want a sweeter taste.
