It's been a long long longggggg while since I last updated this blog. Have to admit that I have been quite lazy these days despite living a busy life. But still, however busy I am, I do not skip meals, so not updating my blog does not mean I have not been eating well. In fact I have been blessed with two great flatmates who has been making home food like Chinese soup, congee etc Really touched and am feeling the warmth from them am grateful about this. I am also very lucky to be allocated to a flat with a brand new kitchen, now I am so much more motivated to try out new recipes! I even purchased some baking tools even this is my last year in uni, as I really want to make the most out of this brand-new and well equipped kitchen!
Without further ado, let me present you with this sweet and sour chicken! I did not know sweet and sour sauce is that easy to make until I heard the recipe from my friend!
Main Ingredients:
(2-3 servings)
300g chicken thigh fillets
4 pineapple rings(canned) (diced)
1 paprika pepper
Marinate:
1tbsp Soy sauce
1 tsp sugar
1 tsp cornflour
Sauce:
4 tbsp Ketchup
2 tbsp White Vinegar
5 tbsp Pineapple juice from the canned pineapple
2 tsp of sugar
1 tsp cornflour and some water
Method:
1. Cut chicken thighs into smaller pieces and marinate with soy sauce, sugar and cornflour.
2. Cut the paprika and pineapple rings.
3. Slightly fry the pineapple for a minute and that can keep the juice in the pineapples, making it more juicy when served. Remove it from pan.
3. Fry the chicken with a bit oil until almost cooked, add in pineapple juice, ketchup, vinegar and sugar.
4. let it cook and then adjust the taste accordingly.
5. Add in the pineapples and peppers.
6. In a little bowl, dissolve some cornflour with cold water and then add that into the pan, this helps thicken the sauce.
7. Make sure you do not leave the peppers cooking for too long or else it will become soggy.
8. When the sauce is thickened, it's ready to serve with rice.
